Almond Pancake Mix
One package of the Plow pancake mix makes approximately 8 small-medium pancakes.
Place the entire contents of pancake mix into a stainless steel bowl. To the bowl, add:
3 eggs
1 c buttermilk
3/4 c milk
3 tbsp melted butter
Whisk vigorously until you get a smooth batter. The batter will thicken over time. Heat your pan over medium low heat. Melt a tsp of butter in your pan or brush with olive oil. Using a 1/4-cup measuring cup to pour batter onto the pan. Almond flour pancakes are more delicate than your regular flour pancake batter and also darken more quickly. Cook for 2-3 minutes per side turning the heat lower if they are browning too quickly. You want to cook them low and slow so that the middles cook without burning.
Serve with more butter and maple syrup.
